Procedure Peel and remove the intestines from the shrimp, leaving the tail segment intact. Put a large frying pan on the heat and add the olive oil. Sauté some floured shrimp in the hot oil for 3 minutes or until opaque. Reduce the heat to medium-low and add in the same pan where you cooked the shrimp 2 tablespoons of butter along with the minced garlic.

Sauté for 2 minutes, but without browning. Pour in the white wine and add the lemon zest and juice. Let the preparation boil for 1 minute or until reduced by half. Lower the heat to its minimum intensity and gradually add the rest of the butter, mixing constantly; allow the butter to melt and fully incorporate into the mixture before adding the next tablespoon.

Add the sautéed shrimp to the sauce and mix until completely covered. Remove the pan from the heat, taste the sauce and adjust the amount of salt and pepper. Arrange the shrimp with their sauce on 4 plates and sprinkle with the chopped parsley. Serve and accompany with lemon wedges, to taste.
