Chocolate Chip Brownie Cookies are like a jackpot. I think my mother made very similar ones long before they became famous. She was always combining different desserts to create new ones. It’s great to have a brownie, a cookie and chocolate chips in one piece. You can accompany these cookies with vanilla ice cream to have a spectacular dessert. I know because that’s exactly what I did to my nephews one afternoon and it was crazy.

I am amazed at how many recipes out there use commercially available brownie mix to make this recipe. I love the brownies that result from these preparations, don’t get me wrong, but the ones in this recipe taste amazing. With this brownies recipe, after baking they are soft and slightly caramelized, which makes them perfect to combine with chocolate chip cookies.

I prefer to leave them slightly undercooked so the cookie is a bit soft, but once it cools it will firm up for the perfect creamy texture. But let me warn you, these cookies are rich and perfectly sweet. Eating a little is enough, so don’t eat them all before serving time. It’s also fun to add different extracts to the brownie mix like coffee, rum or mint. Chocolate Chip Brownie Cookies With this chocolate chip brownie cookie recipe, after baking they are soft and slightly caramelized, which makes the perfect combination with vanilla or chocolate ice cream.

Line a 20 x 20 cm cake tin with greased parchment paper and set aside. Beat the egg together with the vanilla extract. Add the flour, baking soda and salt, stirring until well blended. Add the chocolate chips. Add cocoa powder, stirring until combined. Add the flour and salt, mixing until all the flour is incorporated. Add the chocolate chips if you are going to use them.

Spread the brownie batter in the prepared pan until it is an even layer. Spoon cookie dough over brownie batter until completely covered. Add additional chocolate chips to cookie dough. Bake for minutes. Check it at 30 minutes with a toothpick.

Remove from the oven and place the pan on a wire rack to finish cooling. Once cooled, remove from the mold, cut into squares and serve. If you are going to store them, do it in an airtight container when they are already cold.
